I often soak and sprout a few different beans and use them during busy weekdays for meals.

How to sprout beans in instant pot. If the recipe requires a soft bean, as in a creamy soup or smooth refried beans, allow beans to cook even longer. You can also use a glass lid if you prefer. If not, place beans in a colander and place the colander over a bowl.

½ cup of water will be enough for the short duration of pressure cooking. Remove the sealing ring and place the lid in venting mode, or you can also use a glass lid (it is better to have some natural air when sprouting). After 9 hours check if beans have sprouted or not.

Turn on yogurt setting, by default it sets to 8 hours. Cover with the glass lid or a towel and leave overnight or at least 8 hours. After the soak time, drain the water from the mung beans using a colander.

Place steamer rack in the instant pot. Sprouted lentils also have more vitamins and are easily digested. With their long shelf life, they come in handy for making healthy and quick protein packed meals and snacks.
